With their natural sweetness and moisture, Bananas make these cookies wonderfully soft and flavorful, while the chocolate chips add a rich, decadent touch. This combination always takes me back to my childhood, where each bite seemed to slow down time.

This recipe yields 13 cookies that each weigh around 100grams

Ingredients

  • 225 g Cold Butter
  • 150 g Brown Sugar
  • 100 g Granulated Sugar
  • 1 Egg
  • 1 Banana
  • 1 tsp Cornstarch
  • 1 tsp Baking soda
  • 320 g All purpose flour
  • 1/2 tsp Salt
  • 350 g Dark chocolate chips

Instructions

  1. Using the paddle attachment, cream the cold butter chunks and the sugars until large chunks appear.
  2. Add chocolate chips to the sugar and butter and mix until just incorporated
  3. Sift the dry ingredients together and, on low speed add to the butter mixture
  4. Whisk in the egg and the mashed banana, and mix on low until just incorporated. Make sure not to over-mix
  5. Measure 100g of the dough and place on a tray. The cookies need to be frozen overnight
  6. The day after, preheat the oven to 190°C, place the baking sheet in the oven and bake for 12-15 mins
  7. Wait until they are cooled down and enjoy!
