1. Not overbaking your fondant. It needs to remain gooey in the centre

2. Ideally, make it the day before you intend to serve it, as it benefits from sitting overnight.

Ingredients

  • 200g Butter
  • 200g Dark Chocolate
  • 250g Granulated Sugar
  • 1tsp Salt
  • 5 Eggs
  • 1tbsp Flour

Instructions

  1. Preheat the oven to 190°C. Line a round 24cm pan with a piece of parchment paper
  2. Melt the butter and the dark chocolate together in a bowl. It can be over a bain-marie or in the microwave. If using the microwave, make sure to melt it in 30-second intervals in order not to burn the chocolate
  3. Once the chocolate is melted, mix until smooth and pour it over the sugar and the salt. Using a spatula, mix until smooth
  4. Add the eggs one by one, making sure to mix thoroughly after each addition
  5. Finally, add the tablespoon of flour to the mixture and mix one last time, making sure that all the flour has been incorporated
  6. Place the batter in the prepared pan and put in the preheated oven for 20-25mins. Take out of the oven when the edges are set, but the centre is still jiggly
  7. Let rest ideally overnight before decorating with some powdered sugar, now you're ready to enjoy
