Ingredients

  • 85 g Butter
  • 70 g Granulated Sugar
  • 60 g Coconut Sugar
  • 0.5 tsp Salt
  • 3 Eggs
  • 160 g Coconut Powder
  • 1.5 tsp Baking Powder
  • 120 g Flour
  • 150 g Coconut Cream
  • 130 g Chocolate Chips

Instructions

  1. Preheat the oven to 160°C, and prepare a 20cm loaf pan by using parchment paper
  2. Start by heating up the coconut cream until it thickens slightly; this should take about 5 mins on medium heat. Take off the heat and let it cool
  3. Mix the sugars with the butter and the salt, making sure no lumps of butter remain
  4. Add the eggs one by one and whisk until fully combined
  5. Whisk the dry ingredients together and add to the egg mixture. Whisking until no dry ingredients remain visible
  6. Add the coconut cream and fold until fully incorporated
  7. Finish by adding the chocolate chips, place the finished batter in the prepared loaf pan
  8. Bake for 35- 40mins or until a toothpick comes out clean
