Coconut Chocolate Chip Load
Ingredients
- 85 g Butter
- 70 g Granulated Sugar
- 60 g Coconut Sugar
- 0.5 tsp Salt
- 3 Eggs
- 160 g Coconut Powder
- 1.5 tsp Baking Powder
- 120 g Flour
- 150 g Coconut Cream
- 130 g Chocolate Chips
Instructions
- Preheat the oven to 160°C, and prepare a 20cm loaf pan by using parchment paper
- Start by heating up the coconut cream until it thickens slightly; this should take about 5 mins on medium heat. Take off the heat and let it cool
- Mix the sugars with the butter and the salt, making sure no lumps of butter remain
- Add the eggs one by one and whisk until fully combined
- Whisk the dry ingredients together and add to the egg mixture. Whisking until no dry ingredients remain visible
- Add the coconut cream and fold until fully incorporated
- Finish by adding the chocolate chips, place the finished batter in the prepared loaf pan
- Bake for 35- 40mins or until a toothpick comes out clean
