Crêpes: A Versatile French Delight for Every Occasion
Welcome to the world of crêpes, where thin, lacy pancakes meet endless possibilities! They are as versatile as they are delicious! Crêpes are a staple of French households. Growing up, we would eat crêpes at least once a month, and it was always a time to look forward to!
My favorite way to enjoy them is using my homemade chocolate spread. However, you have an infinite number of options when it comes to toppings. You could top a crêpes with some fresh fruits such as strawberries or raspberries and pair it with a light whipped cream. Another popular option is sprinkling granulated or cane sugar and topping it off with lemon juice.

Here are my top tips for making perfect crêpes every time:
Always use brown butter. It elevates the flavor and adds the perfect nuttiness
Sift all your dry ingredients beforehand- it prevents clumping
Heat the milk until it is lukewarm. It will prevent the batter from getting clumpy
Chill the batter overnight. Chilling the batter allows the gluten to relax
If your batter is clumpy, pass it through a sieve

Ingredients
- 250g Flour
- 45g Granulated Sugar
- 1 tsp Salt
- Vanilla Extract
- 3 Eggs
- 500ml Milk
- 80g Butter
Instructions
- Start by browning the butter as it needs to cool down. Heat the milk until it is lukewarm.
- Whisk the dry ingredients together.
- Add the eggs one by one and whisk until fully combined.
- Slowly add in the milk until the batter is smooth.
- Finish by adding the browned butter. Ideally, cover the batter and let it rest in the fridge overnight.
- Heat a pan over medium heat. Butter your pan and add a ladle full of batter to the pan.
- Flip the crêpe when bubbles appear, and cook on the flip side until golden brown.
- Use your filling of choice and enjoy!
Crêpes are so easy and quick to make; you can quickly whip up a batch of crêpes in less than 10 minutes. Even though I suggest you rest the dough overnight as it enhances the flavor and relaxes the gluten, this step is not mandatory.
If you don’t know what to make but feel like having a sweet treat, these will never disappoint. Learning to flip them in the air is also an enjoyable part of the process; it can be a fun challenge whenever you make them! I may even say that the flipping improves the taste.
