This recipe is perfect if you’re looking to impress someone! It is deceptively easy to make and the only secret to making perfect lava cakes is in the baking. They need to have firm edges but still jiggle in the middle!

You could top this recipe with whipped cream, any berries of your choice, or even some ice cream! It really depends on your preference. For this recipe, I went with the simpler route of just using icing sugar. Let me know which toppings are your favorites in the comments below.

This recipe makes enough for six small cakes. To make it even more decadent, I used two large cake rings with a diameter of 15cm. As you adjust the size of the cakes, the only thing that changes is the baking time—bigger cakes will require more baking time.

This recipe yields 2 Large lava cakes or 6 smaller ones

Ingredients

  • 130g Butter
  • 170g Dark chocolate (ideally 55% cocoa)
  • 2 Eggs
  • 2 Yolks
  • 55g Icing sugar
  • 35g Flour
  • 1/2tsp Salt

Instructions

  1. Preheat oven to 220°C
  2. Brown your butter and pour over your chocolate. Mix until well combined and glossy
  3. Add the eggs one by one and whisk until fully combined
  4. Sift the dry ingredients and mix
  5. Bake for 13mins (if using large cake rings) or until the edges are set but the middle is still gooey
  6. Wait a minute and invert onto a plate, top with extra icing sugar and you’re ready to enjoy!

This recipe is a showstopper! It is so quick to make and can even be prepared in advance. If you want to prepare it in advance, follow the steps until step 4. Instead of baking, place the batter in the fridge. However, ensure that you take the batter out of a fridge at least 2/3 hours before baking, as the dough must come to room temperature to ensure perfect results. If you were to bake the lava cakes using a dough that was still cold, the results would not be ideal.
