Banana bread is the one treat I make weekly for my family; everyone can agree on one thing- delicious!

The secret to fantastic banana bread lies in the bananas themselves. The riper they are, the better! Overripe bananas add natural sweetness and moisture to the bread, creating that perfect balance of flavor and texture. If the sudden urge to bake some banana bread arises but you don’t have any ripened bananas on hand, place the bananas in the oven at 150 degrees Celsius until they turn dark!

This recipe makes enough for a 20cm loaf cake

Ingredients

  • 65g Butter
  • 100g Brown Sugar
  • 1tsp Salt
  • 2 Eggs
  • 2 Bananas
  • 150g Flour
  • 1/2tsp Baking Soda
  • 1 1/2tsp Baking Powder
  • 125g Chocolate Chips

Instructions

  1. Preheat oven to 160 degrees Celcius. Prepare the 20cm tin by lining it with parchment paper
  2. Cream together the room-temperature butter with the sugar and the salt. No butter chunks should remain, and the mixture should be light in color
  3. Add eggs one at a time, mixing well between each addition to ensure everything is well combined.
  4. Mash up the bananas and add them to the sugar and egg mixture. The mixture will look curdled; that's normal
  5. Sift your dry ingredients together and fold them gently into the banana mixture. Add your chocolate chips when about 80% of the flour is still visible. Pour batter into the prepared tin
  6. Bake for 35-40 mins,let cool before enjoying a slice

Storing and Freezing Banana Bread

Banana bread stays fresh for up to 3 days at room temperature when stored in an airtight container. It also freezes beautifully—wrap the loaf tightly in plastic wrap and then in aluminum foil before freezing. When ready to enjoy a slice, thaw it at room temperature.
