This recipe yields a 22cm x 22cm brownie

Ingredients

Biscoff Filling
  • 1 Jar Biscoff Spread
Brownie Batter
  • 200g Butter
  • 200g Dark Chocolate
  • 275g Caster Sugar
  • 4 Eggs
  • 100g Flour
  • 50g Cocoa Powder
  • 1tsp Salt
  • 50g Biscoff Biscuits
  • 50g Chocolate Chips

Instructions

Biscoff Filling
  1. Prepare the brownie tin by lining it with parchment paper
  2. Melt the Biscoff spread in the microwave in short bursts
  3. Spread a layer of the melted spread in the prepared tin
  4. Place in the freezer while you make the brownie batter
Brownie Batter
  1. Preheat the oven to 170°C
  2. Melt the butter and the chocolate in the microwave
  3. Whisk the eggs and the caster sugar together for at least 5mins until pale and doubled in size
  4. Sift the dry ingredients together
  5. Slowly add the chocolate mixture to the eggs and continue whisking until fully incorporated
  6. Add the dry ingredients and fold gently until no more dry lumps remain
  7. Add the crushed Biscoff biscuits and the chocolate chips
  8. Take the frozen Biscoff layer out
  9. Using the same brownie tin, place a new piece of parchment paper
  10. Pour half of the brownie batter into the tin, place the frozen Biscoff layer on top, and top it off with the rest of the brownie batter
  11. Bake for 25mins

Now that you’ve read the recipe, you noticed I did not include any details for the toppings. For mine, I used some melted Biscoff spread and some crushed-up biscuits to add texture. Truth be told, the decoration is entirely up to you, and that’s the beauty of baking.

I love the simplicity of reusing the same ingredients and making them visible, but you could also use some icing sugar, some frosting, or even no decoration to keep it nice and simple.
