These Brookies are even better the next day, making them an ideal make-ahead dessert for parties or gatherings. I highly recommend that you make them a day in advance. It gives them time to settle, and it won’t be a gooey mess when you cut into them (unless that’s something that you like, I’m not one to judge)

Recipe for delicious brookies- Brownie layer at the bottom topped with baked cookie dough. Makes enough for a 22cm rectangular tin.

Ingredients

Brownie
  • 220 g Dark Chocolate
  • 220 g Butter
  • 430 g Caster Sugar
  • 4 Eggs
  • 180 g Flour
  • 30 g Cocoa Powder
  • 1 tsp Salt
  • 1 tsp Baking Powder
  • 100 g Chocolate Chips
Cookie Dough
  • 150 g Butter
  • 300 g Brown Sugar
  • 2 Eggs
  • 2 Egg Yolks
  • 1 tsp Salt
  • 300 g Flour
  • 200 g Chocolate Chips

Instructions

Brownie
  1. Preheat oven to 170°C, prepare a 22 cm square tin with parchment paper
  2. On high whisk the sugar with the eggs until light and doubled in size. With a stand mixer, this usually takes around 5 minutes. If using a handheld mixer, it might take longer
  3. Melt the butter and the chocolate together and mix until smooth and silky, set aside to cool
  4. Sift the dry ingredients together
  5. Slowly pour the melted chocolate mixture into the eggs and the sugar. Mix on low speed until well incorporated
  6. Add the dry ingredients and slowly fold them into the mixture. Add the chocolate chips
  7. Bake in the prepared tin for 15mins
Cookie Dough
  1. Cream the butter and the sugar together until combined
  2. Add the eggs one by one to the creamed butter and sugar. Whisk until fully incorporated
  3. Sift the dry ingredients together
  4. Slowly add the dry ingredients, followed by the chocolate chips
  5. After taking out the brownies from the oven, place dollops of the cookie dough until the brownie layer is fully covered
  6. Bake for 25mins, until golden brown on top
  7. Wait for it to cool and enjoy :)
